Ingredients

  • 10 oz shrimp (peeled and deveined)
  • 3 tbsp oil
  • 1 tbsp ginger (thick slices/minced)
  • 1 tbsp garlic (minced)
  • 1 cup onion (cubed)
  • 2 cups bell pepper (cubed)
  • 1/4 cup green onion (chopped)
  • 2-5 green chilis (split)
Shrimp Marinade
  • 1 tbsp corn flour
  • 1/2 tbsp soy sauce
  • 1/2 tsp salt
  • Pinch of black pepper
Sauce
  • 1 cup water
  • 2 tbsp soy sauce
  • 2 tbsp ketchup
  • 1/2 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tbsp corn flour
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1/2 tsp red chili powder
  • 1 dash black pepper

Method

  1. Season your shrimp with soy sauce, salt, pepper, and corn flour. Mixing everything together to form a paste. Let marinate for 10 mins while you prep the veggies etc.
  2. Put all the ingredients for the sauce together and whisk until well incorporated.
  3. Heat your pan on high, pour in some oil, and add your shrimp. Fry for just 30 seconds on each side, then turn your heat down to medium
  4. Add in the ginger and garlic, frying for a minute or so until the garlic starts to brown.
  5. Then, throw in the onions and bell pepper. Stirfry for a couple minutes until the veggies get some color on them.
  6. Then pour in your sauce. Let it simmer for 5 minutes until the sauce thickens, taste and adjust salt and sugar if needed.
  7. Add in some split green chilis a couple minutes before taking it off the heat, and garnish with some chopped green onions
